2.5kg NZ Pilsner

1.7kg NZ Pale Malt

700g Maris Otter

150g Carapils

 

15g Nelson Sauvin 60 min

50g Centennial Whirlpool 15 min at 80 degrees C

35g Nelson Sauvin 15 min at 80 degrees C

50g Centennial Dry Hop day 5 for 3 days

50g Nelson Sauvin Dry Hop day 5 for 3 days

 

Safale 05 Yeast or White Labs WLP001

Koppafloc added in last 10 min of boil

 

BREWING PROCESS

Water volumes vary depending on the kit that you are brewing on, so as everyone has slightly different diameters, boil off rates, dead space etc, we will leave this topic out of the article.

Mash the grains at 67 degrees to give a little more body and sweetness to compensate for no crystal malt in the recipe.  Mash for 60 min before raising the temperature to mash out around 75 degrees C.

Sparge at 76 degrees until pre-boil volume reaches 27L to 28L.  Aim for 23L into the fermenter post boil.

Hop additions as per recipe.  Whirlpool hopes were added at 80 degrees C for 15 Minutes.

Chill wort to 20 degrees before pitching yeast.
