Grain Bill

2.3kg German Pilsner malt

1.8kg Munich malt

230g Caramunich malt

230g Carafa III malt

115g Chocolate malt

 

Hops

15g  Wakatu hops (10.8% AA), added with 60 minutes left in the boil

15g Wakatu hops, added with 30 minutes left in the boil

15g Wakatu hops, added with 15 minutes left in the boil

 

Yeast

3 packs Saflager W-34/70 dry yeast or 4 packs (or make an appropriate starter) White Labs WLP830 German Lager, Wyeast 2124 Bohemian Lager yeast 

 

Brewing Process

Mash at 67 dgegrees C for 60 minutes. After lautering and sparging, Proceed with a 90 minute boil, accounting for addition losses for the 90 minute boil. Add the first hop addition with 60 minutes left in the boil, and continue following the boil schedule. .

Chill and pitch yeast, fermenting for at least two weeks.

A diacetyl rest at 16 degrees C for two days near the end of primary fermentation is highly recommended.

Lager at 2 degrees C for 4-6 weeks before serving.
